TUESDAY is Pancake Day and there is no better way to celebrate this fun festival than heading down to either of this weekend’s Worcestershire farmers’ markets and picking up some quality free range eggs with which to make your own.

Plenty of us will opt for the traditional lemon and sugar in our pancakes but there are lots of alternatives. If you are looking for something sweet then try some genuine Worcestershire jam, available on the Country Markets and Hanley Swan Bakery stalls. Or, if you prefer, try some delicious Worcestershire honey from Frank Dooley’s Beez Neez Honey stall.

There are also plenty of options for savoury pancakes – think of your pancake as a blank canvas, on which you can create your own masterpiece.

Try cheesy pancakes with ham and leeks, or load yours up with bacon and eat them with a selection of chutneys and pickles – you can pick up plenty of these at this weekend’s farmers’ markets, too.

PANCAKES

Makes about 12

Ingredients

100g (4oz) plain flour
1 egg
300ml (half a pint) milk
Pinch of salt
Oil for frying

Method

To make the pancake batter, add the milk, egg and then the flour and blend using an electric blender or food processor. If a blender is not available, sift the flour and salt into a bowl. Add the egg and beat well. Then add the milk gradually and beat to make a smooth batter.

Heat a drop of oil in a large frying pan until hot and then pour enough batter to thinly coat the base of the pan. Cook for a couple of minutes each side (you can flip it to turn it, or not – it’s up to you).

Tomorrow’s market is in Angel Place, Worcester, from 9am until 3pm. Next weekend’s market is in High Street, Bromsgrove, from 9am until 5pm on Saturday, March 12.
