Chocolate Mousse

Ingredients :

180g dark chocolate, at least 70% cocoa solids
4 eggs
2 tablespoons cream
1 teaspoon of vanilla sugar

Recipe :

Best made the night before, or at least six hours in advance.

Break the chocolate and melt gently in a bowl placed on a saucepan with water in, not letting the bowl touch the water, over a low heat.

Add cream and mix together.

Remove from heat.

Separate eggs, whip yolks and add to chocolate mixture.

Whip whites until stiff, then add vanilla sugar.

Add to mixture by folding in until blended.

Pour into dessert dish, or individual ramequins, chill for at least six hours before serving.

To decorate, cut some strawberries in half and place on top of set mousse with a couple of fresh mint leaves, alternatively use fresh raspberries.
