A quick and easy dessert or great as a weekend breakfast.
These pancakes can be served with fresh fruit and cream or with traditional syrup such as Golden or Maple.
Ingredients:
280 g self-raising flour
1 teaspoon sugar
1 teaspoon salt
3 eggs
1 pint milk
4 tablespoons melted butter
4 tablespoons oil
Golden Syrup, alternatively you can use Maple syrup.
Method:
Sieve together the flour, sugar and salt.
Make a well in the centre and the milk and eggs.
Combine and add melted butter.
Over a medium heat, heat 2 tablespoons of oil in a frying pan.
Fry half a ladle of the mixture at a time, for 2 or 3 minutes or until bubbles start to form on the pancake’s surface.
Flip with a spatula and cook until both sides are golden.
Put to one side and serve hot with melted butter and syrup (Golden or Maple).
