READERS have been sharing their memories of Malvern Pudding since our appeal three weeks ago.

A school has been serving the dessert to its staff and pupils since it was introduced there more than 30 years ago.

Michael McNevin, a former house master at Malvern College, said his wife Betty, who was responsible for catering at the school, introduced the recipe to the cook after discovering it in the Good Housekeeping Eating for a Healthy Heart cookbook in 1976.

Mr McNevin said Betty was sent the book by their daughter while she was recovering from a heart attack.

Mr McNevin, of Windrush Crescent, Malvern, said: “That’s how we came across it.

“It was called Malvern Pudding in 1976.

“At the time I was a house master in Malvern College and my wife was responsible for the catering. She said to the cook about the recipe and the cook produced it.

“The boys were absolutely wild about it and wanted it once a week.

“The recipe has changed a bit.

I despair of using custard in it, you should use white sauce.”

Leaza French, who is events and deputy manager of the catering department at Malvern College, said the Malvern Pudding is still on the menu at the college and they even served it for dessert at a dinner for around 100 teaching staff last September.

She said: “We do still have it on the menu.

“Funnily enough, one of the colleges has just chosen it as their dessert for next week.

“It’s on the menu but it’s not chosen that often.

“It doesn’t look as good when you have mass produced it to when you do a small one for four people.

“When you give the children apples and custard, they’d rather chocolate brownie or something like that.”

Former England and Worcestershire cricketer and former Malvern College pupil George Chesterton included the recipe for the Malvern Pudding in A Worcestershire Cookbook.

The Malvern Pudding is also mentioned in The Art of British Cooking by Theodora Fitzgibbon, which was published in 1965.

The book features the recipe for Hasty Pudding but the author adds at the end of the page, that Malvern has a similar dessert called the Malvern Pudding but is made slightly differently.

Our appeal followed the recipe featuring in ITV’s new programme Food Glorious Food.
