Serves 4
Ingredients:
200g 70% dark bitter chocolate, broken into pieces
4 tblsp orange juice
2 Fresh Egg whites
300ml Double cream
100 ml full fat milk
1 tsp clear Honey
Method:
Place the chocolate and orange in a bowl over a pan of gently simmering water and leave to slowly melt. Remove from the heat, stir and leave to cool for about 5 minutes. Whip the cream until it thickens to form soft peaks.
In a separate bowl, whisk the egg white until it also forms soft peaks. Pour the melted chocolate into the whipped cream and gently stir in. fold in the egg white gently.Pour into serving glasses and ideally chill in the fridge for about 2-3 hours to set, but they can be eaten straight away !!.
Just before serving, heat the milk and honey in a pan and whisk vigerously to form a froth, pour the froth over the chocolate mousse and serve immediatly.
